Smoked Venison Sausage

Ingredients for 5 lbs:

5 lbs ground venison

2 ½ Tablespoons salt

½ Tablespoon brown sugar

2 Tablespoons minced garlic

½ Tablespoon black pepper

½ heaping teaspoon marjoram

1 cup powdered milk

1 teaspoon pink salt

½ Tablespoon cayenne pepper

1 Tablespoon caraway seed

1 cup white wine

Instructions:

Mix all ingredients well.

Put meat paste in 1 gallon ziplok bag and keep refrigerated for 24 or more hours.

Stuff meat paste into natural hog caseings.

I twist mine into 6-7” links it fit a bun.
